The traditional organic rice known as "Kaipad" is grown in the saline-prone (brackish water) coastal rice tracts in Kerala's northern districts of Kozhikode, Kannur, and Kasaragod.

3400 hectares or more of Kaipad rice fields are located in the Kannur district. It covers approximately 500 hectares in the Kozhikode district and 200 hectares in the Kasaragod district. These areas have historically been noted for their rice farming.

In the ancient literature pertaining to the region,rice tracts are mentioned in the historical records of Dr. Francis Bukkanan, an Englishman who was an employee of the East India Company. Local farmers are referred to as "kuttadan" and the rice tracts are referred to as "KayalKandoms."

The local name "Kaipad" comes from the words "Kayalpadam" (where "Kayal" means "backwater" and "padam" is another word for paddy fields).

The Kaipad rice tracts practice a completely natural type of farming depending on the monsoon and sea tides, whereas most cultivators are small and marginal farmers. A single crop of rice is cultivated, on mounds, in a low to medium-saline phase of the production cycle from June to October. Traditional aquaculture is practiced in these tracts with fish or shrimp cultivation during the high salinity season, which lasts from November to April. Without the use of any chemical pesticides or fertilizers, traditional organic farming methods are used to raise rice,fish, and shrimp.

Rice fetches a high price in the market due to its distinctive taste and nutritional value. There is a local tradition in which Kaipad rice cultivators gift rice flakes when they visit the homes of those outside these regions.

On March 3, 2014, the GI registration certificate for Kaipad rice was attained.
